3. How to cook Japanese rice well: wash the rice

Although you don’t usually wash other types of rice before cooking, it’s important to wash and rinse before cooking Japanese rice.Measure the rice correctly (I will tell you how much to measure later), and gently wash it with running water by swishing the rice with your hand. When the water turns a milky white, drain the water. Repeat it for three times.

 

4. Leave the rice in water

Because rice is dry before cooking, it’s hard to completely cook it with a pot. Therefore you can leave the rice in fresh water (preferably mineral water) for 30 min to 1 hour before cooking.

 

5. How much water and rice to add

When you cook long-grain rice, you usually add the quantity of water, which is twice as much the quantity of rice. For Japanese rice, on the other hand, this measurement won’t work.For one rice measuring cup of rice (which is 180ml), you need to put 200-230ml of water. When you cook 2 measuring cups of rice, for example, you should put 450ml of water. Although you can only put 400ml of water, but adding more water makes the rice stickier. It is, however, very important to not to add too much water.

 

6. Cooking the rice

If you have a rice cooker, all you have to do is to close the rid and press the button to cook rice. If you are cooking with a pot, on the other hand, you should pay attention how long you should cook Japanese rice.First put the washed rice and the right amount of water in a pot. Then close the rid and place the pot on the heat. And then start heating up with medium-high heat. Keep in mind not to heat up with strong heat at first. When the water starts boiling, keep cooking with the same heat for 2 min. Then you can turn down the heat a little and cook it for 3 min. After that, you can put a smaller heat and cook the rice for 5 to 7 min more.Open the rid and check if there isn’t still water left. If so, you should leave it for another 1 or 2 min.

 

7. Leave the rice steam after taking off the heat

Many Japanese enjoy eating well-cooked and soft rice. The secret to tasty rice is to leave the rice with the rid on after taking it out of the heat. It will fully cook the rice and make it tastier. You can leave it for 10 min before serving it.
